I ate these baked figs at Porgy and Mr Jones in Hawthorn one afternoon and now I make this dish all the time when figs are in season. I’ve added a balsamic dressing to mine to give it a bit more kick. It’s really fast, easy and super delicious. The salty with the sweet and the tartness of the balsamic is a great combo. You can make heaps of these as an appetiser or entree for a party or intimate dinner. Yum.
You will need:
Figs (go for it – they’re in season now!)
Olive Oil (to drizzle)
Some strips of prosciutto
finely diced fresh tomato
Rocket or spinach leaves
balsamic vinegar mixed with olive oil
What to do:
Preheat the oven to 180 degrees celsius. Chop the stems off your figs and score at the top. Wrap the figs in a strip of prosciutto (wrap around the fig and secure with a toothpick if you like) and drizzle with olive oil. Bake in the oven for about 5 mins then remove and blob a dollop of goats cheese at the top of each fig. Bake for another 5 – 10 mins till the prosciutto looks oily but not burnt. Remove from the oven and plate them up with the rocket, chopped toms and a drizzle of the balsamic and olive oil.
